Ingredients
- Vegetable oil for deep frying
- 6 large Floury Potatoes cut into chips
- 4 thick Cod fillets (6oz each)
- Batter
- 8 oz self raising flour - plus extra for dusting
- 1/2 tsp salt
- tsp Paprika
- tsp Turmeric
- Tbsp Corn Flour
- 300ml Cold Lager

Preparation
Step 1
Preheat your fryer. 120 degrees.
Preheat oven to 150 degrees.
Step 2
Sift in a large bowl all the ingredients for the batter. Then add the Lager and whisk. Check consistency, it should coat your finger or the back of a spoon, but not be too thick.
Step 3
Add the chips to the oil and fry for 10 minutes until softened but not coloured. Remove from the oil and drain on kitchen roll and place in the preheated oven.
Increase temperature of oil to 180 degrees.
Step 4
Season the Fish fillets with salt and pepper, then coat in the flour. Dip the fish fillets into the batter then carefully place into the fryer. Cook for 8 - 10 minutes, turning once. Repeat for the rest.
Step 5
Pull the fish out carefully and leave to cool on a rack over kitchen roll. Reheat oil to 180 degrees and recook chip for 2-3 minutes until golden brown.
Step 6
Serve with a lemon wedge.
