Steamed red mullet with vegetable pasta

Ingredients

  • 8 red mullets of 60g
  • 1 bunch of baby carrots
  • 1 leek
  • 200g fresh pasta
  • 50g pine nuts
  • 20cl milk
  • 50g crushed pistachios
  • salt and pepper

Preparation

Step 1

Cut the carrots and the leeks and steam for 5 minutes.

Step 2

Cook the pasta in salt boiling water for a few minutes. Rinse them and drain.

Step 3

Boil the milk, and off the heat stir in the pine nuts and add seasoning.

Step 4

Steam the seasoned red mullets for 4 minutes.

Step 5

Reheat the vegetables with the pasta and the sauce.

Step 6

Dress the plate with the pasta and vegetables. Place the red mullets on top. Decorate the plate with the pistachios.
