Stuffed Pork Loin, with cider sauce

Preparation
Step 1
Chop the onion, mushrooms, apples, bacon and parsley.
Step 2
Put the loin flat on a board, cut into the slices, salt and pepper.
Step 3
Spread the stuffing onto the slices, roll and tie.
Step 4
Oil the roast rolls, sprinkle with the chopped onion, salt and pepper, bake at 170 degrees for 1.30 hours, turning regularly.
Step 5
In a frying pan, sweat the shallots in olive oil, pour in half the cider, reduce until dry, add the veal stock, bring to boil.
Step 6
Remove the roast rolls, seive the juice and add to the sauce, add the remaining cider, sour cream, adjust the seasoning.
Step 7
Serve the roast rolls with a drizzle of sauce.
