Blue Cheese Stroganoff

Ingredients
- 2 teaspoon olive oil
- 150g rump steak (sliced into strips)
- ½ red onion (finely chopped)
- 2 cloves garlic (finely sliced)
- 100ml chicken stock
- 2 teaspoon white wine vinegar
- 200ml double cream
- 100g blue cheese (crumbled)
- Salt and pepper

Preparation
Step 1
Heat olive oil in a frying pan over medium heat. Add beef strips and fry until browned.
Step 2
Add onion and garlic. Fry for 2-3 minutes until softened.
Step 3
Add hot chicken stock, bring to the boil and deglaze pan by scraping the bottom with a wooden spoon/spatula.
Step 4
Add white wine vinegar, cream and blue cheese. Boil to reduce liquid volume by half. Season with salt and pepper.
