Pork with leeks and peppers

Ingredients

  • 2lb lean pork loin cubed or as steaks
  • 500ml dry/medium cider
  • 2 leeks
  • 2 peppers (red or green)
  • 2 cloves of crushed garlic
  • 2 cm of freshly grated garlic
  • 1tbsp of ground coriander
  • I vegtable or chicken stock cube
  • Salt and back pepper to taste
  • 2 tbsp butter/olive oil

Preparation

Step 1

Fry the pork in the butter/olive oil until browned, then remove from the pan.

Step 2

Fry the vegetables, garlic and spices until softened. Return the pork to the pan.

Step 3

Add the cider and simmer until cooked and reduced. Season to taste.

This simple to cook but deliciously flavoured dish is lovely served with creamy mashed potato
