Ingredients
- 2lb lean pork loin cubed or as steaks
- 500ml dry/medium cider
- 2 leeks
- 2 peppers (red or green)
- 2 cloves of crushed garlic
- 2 cm of freshly grated garlic
- 1tbsp of ground coriander
- I vegtable or chicken stock cube
- Salt and back pepper to taste
- 2 tbsp butter/olive oil

Preparation
Step 1
Fry the pork in the butter/olive oil until browned, then remove from the pan.
Step 2
Fry the vegetables, garlic and spices until softened. Return the pork to the pan.
Step 3
Add the cider and simmer until cooked and reduced. Season to taste.
This simple to cook but deliciously flavoured dish is lovely served with creamy mashed potato
