Gluten-free chocolate sponge pudding


A light and fluffy gluten-free sponge pudding, which is made in the microwave, so is super-quick!

  • 100g ground linseed
  • 100g gluten free flour mix
  • 1 tsp baking powder
  • 100g butter
  • 100g sugar
  • 2 eggs
  • 2 tbs cocoa powder
  • 50g chocolate chips

Step 1

Cream the butter, cocoa powder and sugar together until light and fluffy

Step 2

Add in the eggs, flour, linseed and baking powder and beat to combine

Step 3

Add the chocolate chips and stir

Step 4

Add a little milk, if required - your looking for a dropping 'sponge mix' consistency

Step 5

Pour the batter into a microwaveable pudding dish

Step 6

Cook on a medium microwave heat for around 4 to 5 minutes

Step 7

When cooked remove from the pudding dish and serve with white sauce, cream or custard
