Ingredients

  • 2 pints veg/chicken stock (made with 2 Knorr stock cubes)
  • 4 small-medium potatoes, peeled & diced
  • 2 medium leeks, sliced
  • 1 medium onion, sliced
  • 1 large clove of garlic, crushed
  • Lots of black pepper
  • Salt (if needed)

Preparation

Step 1

Add a little water to a big pan and cook the veg & garlic for 5 minutes, to soften slightly.

Step 2

Add the stock, bring to boil and simmer for 20-25 minutes.

Step 3

When the veg is soft, whizz the mixture with a hand blender. Season with black pepper and salt (if needed) before serving.
