chicken with leeks in a creamy philidelphia sauce

This is a lovely warming dish that can be made in the cooker or slow cooker

Ingredients
- 4 chicken breasts
- 3 large leeks
- 2 red onions
- 1pt chicken stock
- Half tub philidelphia, seasoning
- Grated cheese

Preparation
Step 1
Slice leeks and onions thinly, fry them for 10min till nicely caramilised
Step 2
Seal chicken breasts in frying pan place on top of leek mixture in a casserole dish
Step 3
Make a roux by melting tblsp butter in a pan add 2 tblsp flour stir well till butter has absorbed flour, add stock slowy whisking all time to make a thick sauce
Step 4
Add sauce cook in oven approx 170 for 1hr
Step 5
Add philidelphia stir well sprinkle over grated cheese cook for further 30 mins, serve with veg of choice
If you are are out for day just follow steps up to 4 but put it in a slow cooker on low, when u get home add philidelphia to to high cook for further 20 mins.
