Ingredients
- Leek (1 large / 2 medium)
- Potato (1 large)
- Carrot (4 medium)
- Garlic (2 medium)
- Onion (2 large)
- Parsley (1 tablespoon)

Preparation
Step 1
Heat oil / ghee - add crushed garlic.
Step 2
Chop all veggies into cubes of 1 cm size.
Step 3
Add the chop veggies and 2.2 cups of water. Bring to boil, add parsley and shimmer until veggies (potatoes & carrots) have softened.
Step 4
Crush using a hand blender and add salt to taste.
Step 5
Serve with bread & butter.
