Stuffed butternut squash

Cut off the top of the squash just below the stalk
- 1kg butternut squash (quite ripe so the flesh is not too hard)
- 300g minced beef
- 60g rice (I used Thai rice)
- 1 onion
- grated cheese (2 handfuls)
- 1 beef stock cube dissolved in 100 ml hot water
- 2 teaspoons ground coriander
- oil
- salt and pepper

- 4 garlic cloves,
- 2 tbsp grapeseed oil
- 200g firm tofu - sliced into baton shapes
- 740g cooked brown jasmine rice - cold
- 1 red onion - sliced
- 100g broccoli - sliced
- 2 eggs beaten
- 2 tbsp fish sauce
- 1 tbsp manuka honey
- 1/4 cucumber - finely sliced
- 1 tomato - cut into wedges
- 1/2 lime
- Water
Thai Rice

Boil the rice in salted water till half cooked
- 3 cups rice
- ~ 100 g butter
- ~ 2 tsp crushed garlic
- ~ 2 tsp crushed green chillies
- 1 & 1/2 - 2 coloured peppers, diced
- 2-3 carrots, grated
- 2 bunches spring onions, sliced thin
- 1 fillet chicken, diced small
- 1/2 a cabbage, grated
- 1 small tin sweetcorn
- 1 1/2 - 2 tsp salt
- 6-8 tbsp soya sauce
- 3 tbsp Island chilli sauce
- 2 tbsp Island garlic sauce
- a handful of uncooked spaghetti, broken into small pieces (optional)
- Green Chutney:
- 1/3 tsp garlic
- handful of green dhana
- ~ 1/2 tsp green chilli
- 1/4 tub yogurt
- 2-3 tbsp single cream or milk
- a pinch of salt
- 1/2 tsp jeeru powder
