Roast butternut squash with chilli mince

Preheat oven to Gas Mark 6/200°C/fan oven 180°C
- 1 portion(s) (large) Butternut Squash, halved lengthways and deseeded
- 250 g Lean Beef Mince (10% fat), cooked
- 1 small Onion
- 2 garlic cloves, crushed
- 2 tablespoons (level)
- Tomato Purèe
- 1 individual Chilli, deseeded and finely sliced
- 2 tablespoons Coriander
- 1 pinch Salt
- 1/8 teaspoons Black Pepper, freshly ground
Stuffed butternut squash

Cut off the top of the squash just below the stalk
- 1kg butternut squash (quite ripe so the flesh is not too hard)
- 300g minced beef
- 60g rice (I used Thai rice)
- 1 onion
- grated cheese (2 handfuls)
- 1 beef stock cube dissolved in 100 ml hot water
- 2 teaspoons ground coriander
- oil
- salt and pepper
