- rock salt
- 50g grated cheese
- 4 rashers of bacon
- 100g cream cheese
- large knob of butter

Step 1
Rub the potatoes in olive oil and salt and place in the oven (bass mark 6) for an hour or longer, until the skin goes crisp and brown
Grill or fry the bacon
Take the potatoes out when crispy and cut in half
Scoop out the middle into a bowl
Combine butter, cream cheese, bacon (chopped up) and half the cheese with the potato.
Put the potato filling back in to the skins
Put the remaining cheese over the top and place back in the oven until the cheese melts and goes a lovely golden brown
