Ingredients
- 454g Chicken Liver
- 1 small onion
- 1 cup bread (moisten with cold water)
- 2 egg yolks
- 1tbsp plain flour
- 1/2 cup milk
- a sprig of thyme
- 1 bay leaf
- 3 rashers of bacon
- salt & pepper
- 1tbsp sugar
- 2tbsp sherry

Preparation
Step 1
season liver, fry with onion, thyme and bay leaf. when half cooked pass through a course sieve or chop in blender
Step 2
mix flour and milk until smooth add to mixture with bread. pour back into pan and bring to boil. remove from heat, add egg yolk, sugar and sherry
Step 3
blend until smooth. pour into shallow baking dish that has been lined with bacon
Step 4
bake for 1 hr @ 160-180*c
