Makarna Firinda (Macaroni in the Oven)


A filling dish with mince and pasta. One of my all time favourites!

  • 1 packet macaroni
  • 1 large packet of mince (500g)
  • 1 onion
  • chopped
  • 1 tin tomatos
  • fresh parsley
  • pinch salt
  • pinch black pepper
  • 1 chicken stock cube
  • olive oil (for frying)
  • For the sauce topping:
  • 3 eggs
  • beaten
  • 3 tbsp flour
  • 1 pt milk
  • 1 tbsp Helim
  • grated (Turkish cheese)
  • 1 tbsp cheddar cheese
  • grated

Step 1

Fry onion in a little olive oil and add the mince. Once browned, add the tin tomatos, crumble one chicken stock cube, fresh parsley, salt and pepper to taste.

Step 2

In a pot cook the macaroni as per packet instructions (I use a pinch of salt and a splash of olive oil). Drain and set aside.

Step 3

Make tye sauce topping:
In a saucepan add the milk, beaten eggs air connd flour. Stir continuously on a medium heat until the mixture is smooth. Once the sauce has thickened, add the grated helim and cheese. Set aside.

Step 4

In a deep oven dish place half the cooked macaroni in the bottom and layer the mince on top. Add the remaining macaroni on top of the mince. Top with the cheese sauce mixture.

Step 5

Grate a mixture of helim and cheese. Add dried mint and combine. Sprinkle this grated helim, cheese and mint mixture on top of the cheese sauce.

Step 6

Place in a hot oven, gas mark 7 untilo browned. Then lower the heat to gas mark 4 for a further 15 minutes.

Step 7

Enjoy with a nice fresh salad!
