  • - 900 g onion
  • - 2 tbsp butter
  • - 2 tbsp olive oil
  • - 1 glass of white dry wine
  • - 700 ml stock (here: beef tea)
  • - salt and freshly ground black pepper.

Preparation

Step 1

peel the onions and chop into thin halfslices.

Step 2

heat the olive and butter on the pan. add the onion and fry for about 30 min. don't burn it, so stir very often.

Step 3

add the wine and stir well to unstuck all brownings.

Step 4

boil for about 3 min. and then add the stock (beef tea).

Step 5

boil on the small gas and smother for 30 min.

Step 6

season the soup

Step 7

blend it into the smooth cream
