Ingredients

  • 1 tbsp sunflower oil
  • 1 onion, chopped
  • 1 cm ginger, chopped
  • 1.5 tsp cumin
  • 1.5 tsp coriander
  • 2 tsp curry powder
  • 0.5 tsp garam masala
  • 225 g cauliflower florets
  • 85 g red lentils
  • 450 ml veg stock
  • 85 g frozen peas
  • 1 tbsp coriander, chopped

Preparation

Step 1

Heat oil in pan, add onion, ginger and garlic, cook on medium heat until soft, stirring occasionally.
Add cumin, coriander, curry powder and garam masala. Cook gently for 1 minute, stirring. Add caulifower, cook gently for 1 minute, stirring.

Step 2

Add lentils and stock, stir. Bring to boil, reduce heat, cover and simmer for 15 mins/until lentils are cooked, stirring occasionally.

Step 3

Stir in peas, bring to boil, simmer, uncovered for 4 mins, stirring occasionally.
Stir in coriander, serve.
