- 1 aubergine cut into slices lengthways
- 1 courgette cut into four slices lengthways
- 1 red pepper seeded and cut into quarters, lengthways

- 100g fine cornmeal
- 2 tsp salt
- 4 tsp baking powder
- 2 tbsp olive oil
