A tasty tart with the rich, sweet crunch of caramelised onions, creamy saltiness of feta and bite of the olives
- Olive oil
- 3 red onions, roughly chopped
- 2 tbsp soft light brown sugar/light muscovado sugar
- 2 tbsp balsamic vinegar
- 375g ready-rolled puff pastry
- 100g feta or goats cheese, crumbled
- 175g pitted black olives, chopped in half

A rich shortcrust pastry pie recipe, packed with flavour and full of all the things us Brits do best
- 2 tablespoons olive oil
- 1 knob butter
- 3 sprigs fresh rosemary, leaves picked and chopped
- 3 sprigs fresh thyme, leaves picked
- 3 fresh bay leaves
- 3 medium red onions, peeled
- 1 kg quality shin of beef, ask the butcher to cut into 2.5cm dice and give you the bone

- For the pastry
- 300 g plain flour
- 100 g Atora shredded suet
- 100 g butter
- sea salt
- 1 large free-range egg, beaten
Rabbit and red wine stew

Peel the onions and cut into thick slices
- - 1 rabbit, cut into pieces (1.4 kg)
- - 600 g red onions
- - 1 chopped shallot
- - 30 g + 30 g + 20 g butter
- - 25 cl of red wine
- - 2 tbsp of sherry vinegar
- - 1 sprig of thyme
- - 2 sage leaves
- - 1 tsp. caster sugar
- - Salt and pepper
- Potatoes, to be boiled and served with the stew.
Vegetarian Toad in the Hole!

In a roasting tin, pour in the equivalent of 2/3 tsp olive oil
- 2 small eggs
- 300 ml milk
- 100 g plain flour
- pinch of salt & pepper
- 2 tsp wholegrain mustard
- 8 large vegetarian sausages
- 1 large red onion (or 2 small)
- 2 garlic cloves, crushed
- mixed herbs
- olive oil
Steak with Shallot and Red Wine Sauce

Heat 2 tsps oil in pan, add shallots, cook on medium heat 5-7 mins until beginning to soften, stirring occasionally
- 3 tsp olive oil
- 8 shallots, sliced

- 2 rump steaks, each 175 g
