Spicy Bean, Tomato and Sausage Soup.

This is a lovely, wholesome & hearty soup is a warming meal and perfect for the long, dark winter nights ahead.
Ingredients
- 10 ml olive oil
- 1 onion, peeled & chopped
- 2 cloves garlic, peeled and crushed
- 1 chopped red pepper,
- 2 chopped celery sticks
- 150g Chorizo sausages, cut into small chunks
- 15 ml tomato puree
- 300ml vegetable stock
- 1 x can of Borlotti Beans or Black Eyed Beans
- pinch of sugar (optional)
- Salt & freshly ground black pepper
- Crusty white bread to serve

Preparation
Step 1
1. Heat the oil in a large saucepan, add the onion and garlic and cook for 5 mins until soft
Step 2
2. Add the pepper and celery to the pan and cook for 5 mins. Stir in the sausage, tomato puree, tomatoes, stock and seasoning. Bring to the boil, cover and simmer for 15 minutes
Step 3
3. Add the beans to the saucepan and cook for 5 mins. Add a little sugar if necessary. Serve with crusty bread.
