Buttermilk Fried Chicken

This way of cooking chicken is so good. Don’t worry about the take away, get yourself some quality chicken and make your own southern fried chicken. This isn’t something to eat every day, but once or twice a month it wont hurt!
This is marinated in buttermilk and then coated in spices and fried. It couldn’t be easier!

Ingredients
- 8 Chicken pieces
- legs
- thighs or a mix of the 2.
- 500ml Buttermilk (you can buy this or make your own)
- Oil
- Rapeseed or Sunflower work well
- enough for about 2-3 in your pan
- 300g Plain Flour
- 2 tsp Paprika
- 2 tsp Garlic Powder
- 2 tsp Cayenne Pepper
- Salt and Pepper

Preparation
Step 1

Put the chicken into a container and pour over the buttermilk. Do this the night before or in the morning before you go to work. You can marinate for anything from about 30 minutes, but for the best results leave it overnight.
Step 2

Mix together the flour with the paprika, garlic powder, cayenne and season with salt and pepper. You can use more or less spices to suit your taste. You can experiment by adding different ratios and/or different herbs and spices.
Step 3

Lift the chicken out of the buttermilk and coat well in the spiced flour. Make sure it is all coated and shake off any excess.
Step 4

Heat your oil in a pan until it is at a good frying temperature. You can test by dropping a small amount of the flour in, it should bubble straight away. Keep an eye on the temperature and adjust the heat to maintain a constant heat. Don’t be scared of it, as long as you keep an eye on the pan it will be fine, just don’t leave it.
Step 5

It will take 20-25 minutes to cook, turn it every few minutes until golden and cooked through. Check it by either using a thermometer or push a knife into it, the juices should run clear.
Step 6

Drain on some kitchen roll and serve with some coleslaw and chips or spicy rice.
