
Ingredients
- 3/4 lb flour
- 1/2 lb butter
- 1/2 lb caster sugar
- 1 lb currants
- 1/2 sultanas
- 1/2 lb mixed peel
- 4 oz ground almonds
- 4 eggs
- 1/4 tsp. bi-carbonate of soda
- a little milk
- 1/4 tsp. spice or nutmeg
- 1 tbsp. golden syrup
- FOR THE ICING
- 10 oz icing sugar
- cold water (about 2 tbsp.)
- vanilla flavouring
- crystallised rose leaves

Preparation
Step 1
Beat the butter, sugar and syrup to a cream.
Step 2
Add eggs one at a time and beat well.
Step 3
Add flour, spices, peel, fruit and almonds together and add to the mix.
Step 4
Add the soda dissolved in a little milk. Mix well
Step 5
Pour into a greased baking tin and bake in a slow oven for 2 to 3 hours.
Step 6
Ice cake when cold.
Step 7
Roll the lumps out of the sugar and rub through a hair sieve.
Step 8
Put in a saucepan and mix to a smooth paste with cold water, add also a few drops of vanilla.
Step 9
Stand it over a low burner and stir the icing until the base of the pan feels warm. The icing should coat the back of the spoon.
Step 10
Pour icing over the cake and coat evenly. Crush a few rose leaves and sprinkle over the top.
