Ingredients

  • 8oz SR flour
  • 4oz caster sugar
  • 4oz butter
  • 1 egg lightly beaten
  • 4 tablespoons of strawberry jam

Preparation

Step 1

Preheat the oven to 190c fan or Gas mark 5.

Step 2

Rub flour, sugar, butter together or put in a food processor.

Step 3

Add an egg to make a stiff dough.

Step 4

with clean floury hands shape into a long 'sausage' around 5cm in diameter.

Step 5

Cut into 2cm thick slices and put on a large baking sheet lined with parchment.

Step 6

Space them out as they spread. Make a dent in the middle of each one with the end of a wooden spoon handle and drop in a teaspoon of Jam.

Step 7

Bake for 10 to 15 minutes until golden and slightly risen and cool on a wire rack.

Little thumbs can also make the dents but only if they are very clean and Granny has checked them first!
