Ingredients

  • For the biscuits:
  • 900gr plain flour
  • 200gr caster sugar
  • 240gr olive oil
  • 240gr vegetable oil
  • 160gr orange juice (fresh)
  • 50 gr sherry
  • 1tsp bicarb. soda
  • 2 tsp baking powder
  • 1 tsp grounded cloves
  • 2 tsp cinnamon
  • zest from 2 oranges
  • For the syrup:
  • 400gr caster sugar
  • 400gr honey
  • 400 gr water
  • zest from 1/2 lemon
  • grounded walnuts (to serve)

Preparation

Step 1

Sift the flour and the baking powder through a sieve and set aside. Combine all the wet ingredients and the orange zest, except from the orange juice.

Step 2

Add the bicarbonate soda in the orange juice and pour in the wet ingredients mixture. Stir lightly. Sift the flour in and mix very lightly with your hands. This dough doesn’t need lots of mixing. Once the flour is fully incorporated stop.

Step 3

Take a small portion of the dough (the size of a walnut) and make small biscuits in round or oval shape. I prefer oval. Place on a baking tray lined with parchment. Once you finish pierce them 3-4 times with a fork and bake in preheated oven at 160C for approximately 25 minutes or until golden brown.

Step 4

Let them cool completely and prepare the syrup. Pour all the ingredients in a pot and bring to boil. Once it starts boiling count 3 minutes and remove from heat.
Place the biscuits in the syrup (2 at a time) and count 20 seconds at each side. Sprinkle with the grounded walnuts and start eating!
