  • 2 small eggs
  • 200g icing sugar, plus extra for coating
  • 2 teaspoons baking powder
  • 400g ground almonds
  • Rind of 1/2 lemon
  • Orange flower water to taste
  • Oil

Preparation

Step 1

Break one egg and one egg yolk into a large bowl. Next beat in the sugar and baking powder until smooth.

Step 2

Put in the ground almonds, lemon rind and orange flower water.

Step 3

Knead the ingredients into aworkable paste and add more egg whites, if needed.

Step 4

With oiled hands, roll the dough into small balls.
Dust a plate with icing sugar and roll the balls on the plate to cover them in sugar.

Step 5

Put the balls, spaced apart, on a baking sheet and bake at 180°C for 15 minutes until golden.

Transfer to a wire rack to cool. Store in an airtight tin.
