- 1 vanilla pod
- 200ml/7fl double cream
- 200ml/7fl oz. milk
- 4 tbsp. caster sugar
- 1 1/2 tsp. powdered gelatine
- To serve: fresh berries or stewed rhubarb

Prepare the peas the English way: Boil salted water
- - 2 lamb fillets (from the saddle)
- - 500g of peas
- - 2dl beef consommé
- - 1 sheet of gelatine
- - 4 spring onions
- - 1 small lettuce
- - 0.5dl whipping cream
- - 1/2 bunch of mint
- - 0.5dl white wine
- - 1 clove of garlic
- - 0.5dl veal stock

Put gelatine into a bowl and pour in enough water just to cover the gelatine and mix together
- 4 tbsp gelatine
- 4 tbsp caster sugar
- 2 tbsp glucose
- ½ cup cola or fanta or whatever flavour you want
- Food colouring

Redcurrant mousse with red fruit coulis

Soak the gelatine sheets in a bowl of cold water and leave to soften a few minutes
- 300 g fresh currants
- 250 g plain fromage blanc or thick plain yoghurt
- 250 g of single cream, very cold
- 200 g sugar
- 5 sheets of gelatine
- A few mint leaves to decorate
- (don't uses special low-fat yoghurt or cream as it the mousse wil not thicken properly)
Salmon Mousse

- 8oz tin salmon
- 1/2oz gelatine
- 3tbsp hot water
- salt and pepper
- 1/4pt mayonnaise
- 1/2pt evaporated milk
- lettuce and cucumber to garnish
