- Tomatoes finely chopped - 3 or 1 tin
- Onion - 1 finely chopped
- Olive oil- 1 tsp
- Coriander powder- 1/2 tsp
- Pepper- 1/4 tsp
- Garlic paste- 1/2 tsp or 1/2 tsp slices
- Chilli powder- 1/4 tsp
- Salt- to taste

Heat a little oil in a saucepan
- 4 tomatoes, diced
- 40g of sugar
- 1 tbsp curry
- 1 tsp turmeric

- 3 lbs (1,5kg) of courgette flesh, diced into 1cm cubes

- 100g Golden Raisins soaked in 2Tbls orange juice or liquer

- 250g blackcurrants
- 1kg apples, diced
- 2 litres water
- Juice of half a lime or quarter of a lemon.
- 400g sugar per 500ml of drained liquid.
