  • 2 egg yolks
  • 500 ml of peanut oil
  • 2 tbsp water
  • 2 tbsp lemon juice
  • 1 tsp of salt
  • 3 turns of the pepper mill

Step 1

All ingredients must be at the same temperature for the mayonnaise to work, so take the eggs out the fridge in advance.
In a bowl, whisk the egg yolks and water, slowly incorporate the peanut oil, while continuing to whisk by hand.

Step 2

Add salt, pepper and the lemon juice and stir. Adjust the seasoning and reserve. After 30 minutes, the mayonnaise should be firm enough to cut with a knife.
