Ingredients
- 3 lbs (1,5kg) of courgette flesh, diced into 1cm cubes
- 2 lbs (1 kg) of apple flesh, diced into 1cm cubes, held in acidulated water till ready
- 2 1/2 lbs (1.250 kg) of granulated sugar
- 100g Golden Raisins soaked in 2Tbls orange juice or liquer
- 1 tsp allspice powder

Step 1
Put all ingredients into large pan and bring to the boil. Turn down heat so it simmers quite vigourously for a few minutes until setting point is reached.
Step 2
Pour into hot, sterilised jars and seal.
1. Best apples to hold their texture are a firm eating apple.
2. Best way to test setting point is to put a teaspoon of the jam onto a cold saucer, let it cool a few moments and if it forms a wrinkled surface, it is ready to set. Stir often but watch it does not catch and caramelise.
3. Use alone as jam or altenatively as pie filler with blackberries. autumn raspberries, apple puree and barely sweetened crumble made from butter, flour, oats and chopped nuts and serve with whipper cream or ice cream.

Who would have thought courgette and apple would go so well together as a jam! I wad dubious and now totally converted!
