Preparation

Step 1

Rehydrate the gelatine in cold water. Cut the apples into small cubes. Melt the drained gelatine in hot cream and stir into the goats cheese. Add the diced apples and raisins. Gently fold in the whipped cream and adjust the seasoning. Fill the flexible half sphere moulds.

Step 2

Smooth with a spatula and place in the fridge or freezer to cool.

Slice the peeled carrots into cubes and cook in salted water with caraway seeds and a drizzle of olive oil.

Step 3

After cooking, drain, blend and pass through a sieve. Keep some of the cooking water for the sauce if you need it.

Make the tangy sauce by mixing all the ingredients. Adjust the seasoning.

Step 4

Garnish the Chinese spoons with sauce and place the Bavarian goats cheese dome in the middle. Sprinkle with cumin seeds.
