Thai style potato salad

Steam cook the potatoes for 20 minutes
- 400 g potatoes with firm flesh
- 1/2 cucumber, cut into thin sticks
- 2 tablespoons of lime juice
- The zest of one lime
- 100 ml of coconut milk
- 1 tablespoon of fish sauce
- 1 teaspoon of brown sugar
- 1/2 teaspoon of salt
- 1 small red chilli
- 1 spring onion, finely chopped
- coriander and crushed peanuts (optional)

Drain the crab meat and mix with the cucumber, bok choy and onions
- 500g crab meat
- 1 Chinese cabbage (bok choy), chopped
- 1 cucumber, thinly sliced
- 1 red onion, thinly sliced
- 1 green onion, chopped
- 1 Bunch mint leaves
- 2 cloves garlic, crushed
- 2 tbsp of lime juice
- 2 tbsp of Nam Pla
- 1 tbsp palm sugar

Trim the coriander by removing the very ends of the stalks
- A large bunch of coriander
- 2 lemongrass stalks
- 2 shallots, chopped
- 2-3cm piece fresh root ginger, chopped
- 1 fat clove garlic, crushed
- 1-3 red birds eye chillies,
- roughly chopped (to taste)
- 2 tbsp fish sauce
- 1 tbsp toasted sesame oil
- Juice and zest 2 limes
- Salt & freshly ground black pepper
- 2 large chicken breasts, skinless & boneless
- 250g brown rice
- 2 large or 3 medium Pink Lady® apples,
- cored and chopped into bite sized pieces
- 1 ripe mango, flesh chopped into
- bite sized pieces
- 3 tbsp salted peanuts, roughly chopped (optional)
