- 2 garlic cloves
- olive oil
- 2 tbsp rosemary sprigs

Deseed and chop pepper into large chunks
Chop onion, garlic and courgette
Keep cherry tomatoes whole
Put into an oven proof dish
Cover with the oil and rosemary
Toss to ensure all fully coated
Place in the oven for 40 minutes or until well roasted
