  • 4-6 thick slices of crusty / french bread
  • 3 ripe tomatoes
  • 1 garlic clove
  • 4 tbsp fresh basil
  • olive oil
  • salt and pepper

Step 1

Toast either side of the bread until lightly golden
Rub one side with the peeled garlic clove so it gets a flavour of the garlic
Peel the tomatoes and remove the seeds, then finely chop
Place in a bowl and stir in the roughly chopped basil
Season well
pour the mix over the bread and serve immediately


You could add some chilli to give this an extra kick
