  • Cake:
  • 60g cake flour
  • 1/3 cup cocoa powder
  • 1/4 tp salt
  • 4 eggs
  • 135g sugar
  • 40g melted butter
  • 1tp vanilla extract
  • Whipped cream:
  • 600ml heavy whipping cream
  • 30g sugar
  • 1tp vanilla extract
  • Cherry fillings:
  • 700ml Morello cherries
  • 240ml cherry juice
  • 50g sugar
  • 2tp vanilla extract

Step 1

Preheat oven to 180oC. Grease the cake tin with butter.

Step 2

Mix cake flour, cocoa powder and salt together.

Step 3

Add sugar to egg and whisk together.

Step 4

Warm the eggs over water bath. Keep stirring until lukewarm.

Step 5

Beat the eggs until smooth and creamy. Add vanilla extract and mix.

Step 6

Add flour mixture to egg mixture 1/3 at a time and mix well. Add 4 tbsp batter into warm melted butter and mix. Then, transfer back to the batter and mix well. Bake for 20-25min.

Step 7

Mix sugar, vanilla extract and heavy cream together. Cover and chill in the fridge with the whisk for 1 hour.

Step 8

Drain the cherries and remain the juice. Cook the juice with sugar over medium heat until dissolved. Then add vanilla extract.

Step 9

Cut the cake into 2 layers. Pour the juice over the the 2 layers. Whipped the cream until smooth. Spread the cream in between the layers and line the cherries. Cover the cake with more cream.

Step 10

Top the cake with cherries and chocolate.
