  • 3 eggs
  • 100g white sugar
  • 30g brown sugar
  • 113g butter
  • 1tp vanilla extract
  • 130g self-raising flour
  • 1/4 tp salt
  • 1/2 tp baking powder

Preparation

Step 1

Beat the eggs, white sugar and brown sugar at room temperature until thick and pale. This may take up to more than 10min.

Step 2

Melt butter in pan.

Step 3

Add vanilla extract into egg and whisk.

Step 4

Mix self-raising flour, salt and baking powder together. Sieve and mix into the batter 1/3 at a time. Add and mix portion by portion.

Step 5

Add 1 big spoon of batter into the warm butter and mix. Pour the mixture back into the batter half at a time from the side.

Step 6

Mix everything well.

Step 7

Cover and chill the better in the fridge for at least an hour.

Step 8

Preheat oven to 190oC.

Step 9

Brush tray with butter. Pour some flour on each mould and tap the excess out.

Step 10

Bake for 10-15 min until golden brown.

Can add orange/lemon skin for flavour.
