- 150g rye flour
- 175g spelt flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp olive oil
- 240ml dairy-free milk (unsweetened or sweetened soya) mixed with 1 tsp lemon juice

Preparation
Step 1
Preheat the oven to gas mark 6. Then combine the flours, baking powder and salt together. Pour in the olive oil very slowly and mix together. Then add the dairy free milk and lemon juice mixture. Mix together until you form a dough.
Step 2
Next divide the dough into quarters, dust with spelt and shape into rounds cm thick. You may prefer to use a rolling pin. Then sprinkle the prepared rounds with rye flakes and press into the dough.
Step 3
Place the flatbreads onto a greased baking tray and bake for 15 minutes.
Use for breakfasts or to accompany other meals. Also add raisins and sunflower seeds for a sweeter version
