Piri Piri Stir Fry Pork

Ingredients
- 2 tablespoons oil
- 500g pork fillet, cut into bite sizes pieces
- 2 carrots, peeled and cut into thin batons
- 4 spring onions, sliced
- 135g baby corn, halved lengthways
- 155g mangetout, halved diagonally
- 6 tablespoons of Piri Piri sauce
- 2 tablespoons water

Preparation
Step 1
Heat 1 tablespoon of oil in a wok. Add pork and stir fry for 4-5 mins. Drain off any meat juices and keep for later
Step 2
Add another tablespoon of oil, plus the carrots. Stir fry for 1 minute
Step 3
Add the remaining vegetables and stir fry for 2 – 3 minutes
Step 4
Stir in the Piri Piri sauce and reserved meat juices, together with 2 tablespoons of water. Heat through and serve
Serve with noodles
