Piri Piri Stir Fry Pork

Ingredients

  • 2 tablespoons oil
  • 500g pork fillet, cut into bite sizes pieces
  • 2 carrots, peeled and cut into thin batons
  • 4 spring onions, sliced
  • 135g baby corn, halved lengthways
  • 155g mangetout, halved diagonally
  • 6 tablespoons of Piri Piri sauce
  • 2 tablespoons water

Preparation

Step 1

Heat 1 tablespoon of oil in a wok. Add pork and stir fry for 4-5 mins. Drain off any meat juices and keep for later

Step 2

Add another tablespoon of oil, plus the carrots. Stir fry for 1 minute

Step 3

Add the remaining vegetables and stir fry for 2 – 3 minutes

Step 4

Stir in the Piri Piri sauce and reserved meat juices, together with 2 tablespoons of water. Heat through and serve

Serve with noodles
