  • 200g broad beans
  • 1 Onion
  • 6 eggs
  • 100g Mature Cheese
  • 20g feta cheese
  • 1/2 clove garlic
  • Paprika
  • Fresh mint

Preparation

Step 1

Boil the beans until softened and peel

Step 2

Whisk and season the eggs, sprinkle with paprika and crush in 1/2 clove of garlic

Step 3

Chop some onions and begin to fry in a gentle heat, pour in the eggs, chopped mint leaves and broad beans and increase the heat to high to crisp the edge of the eggs

Step 4

Grate your cheese over the surface and some crumbled feta and transfer to beneath the grill on high heat until the surface is a golden brown

Step 5

Once cooked place a plate on top of the pan and flip to release, grate some extra cheese on top and serve with warm buttered bread.

Sliced jalapeno's would add a kick to this meal.

For a healthier appetite add some baked beans and a sausage.
