
Ingredients
- 450g pork fillet
- 50g butter
- 1 tbsp paprika
- 2 finely chopped shallots
- 150ml double cream
- Juice of ½ lemon
- 2 tbsp chopped parsley
- Salt and pepper

Preparation
Step 1
Cut the pork into strips
Step 2
Heat the butter in a pan, add the meat and fry quickly, keep slightly underdone
Step 3
Sprinkle in the paprika, toss to cover then remove the pork and place to one side
Step 4
Add the shallots to the pan and gently cook to soften, but not allowing to colour
Step 5
Add the double cream and reduce by a third
Step 6
Pour in the lemon juice and season with salt and pepper
Step 7
Place the pork back in the pan and heat through (to thicken sauce) - do not boil
Step 8
Sprinkle over the chopped parsley and serve
For a change - add a few sliced button mushrooms during cooking
