Ingredients
- 350g pork fillet
- 1 tbsp olive oil
- 1 red onion, sliced
- 1 garlic clove, crushed
- 50g chorizo, sliced
- 2 level tsp smoked paprika
- 1 red pepper, deseeded and sliced
- 400g can chopped tomatoes

Preparation
Step 1
Cut pork fillet into 1cm slices
Step 2
Heat olive oil in a frying pan and cook onion until soft
Step 3
Add garlic and cook for another minute
Step 4
Add the pork and sliced chorizo and cook over a medium heat until browned on both sides
Step 5
Stir in smoked paprika and sliced red pepper
Step 6
Add tomatoes, bring to the boil, then simmer for 10 minutes
Colour of pepper is not crucial!
