Ingredients

  • 1 onion, chopped
  • 2 sticks of celery, sliced
  • 350g long grain rice
  • 400g can chopped tomatoes with chillies and peppers
  • 175g chorizo, diced
  • 326g can sweetcorn, drained
  • 2 tablespoons oil
  • 500 ml hot water
  • Flat leaf parsley, chopped

Preparation

Step 1

Heat oil in a pan; add the onion and celery and gently fry until onion is soft and golden

Step 2

Stir in the rice, making sure that all the grains are covered in the oil

Step 3

Add the tomatoes, chorizo and water. Season to taste, cover and simmer for about 12 minutes until all the water has been absorbed

Step 4

Add the sweetcorn; heat it through and then serve – garnished with parsley if you like
