A delicious Creole chicken, sausage, veg and rice dish- can be all cooked in one-pot, a great way of using leftover

  • 50g margarine
  • 1 white onion, diced
  • 1 celery stick, diced
  • 1 red pepper, seeded and sliced into strips
  • 2 garlic cloves, crushed finely
  • 1 red chilli, finely chopped
  • 1 tbsp Cajun seasoning
  • ½ tsp Worcestershire sauce
  • Pinch smoked paprika
  • 180g long grain rice
  • 1 tin chopped tomatoes
  • 500ml chicken stock
  • 4 cooked sausages, sliced thickly
  • 120g cooked chicken
  • Salt, pepper and sugar to taste.

A one-pan rice dish which I use to feed my family of 6 (myself, husband, and 4 children aged 18,16,14 & 7)

  • 200 g bite sizes pieces of left over meat (chicken, chorizo, beef, ham, sausage etc). Alternatively, meat can be cooked specifically for the recipe, but will add to the preparation time.
  • 500 g of easy-cook long grain rice
  • raw vegetables as available - eg onion, pepper, courgette, carrot, celery (I usually use at least two different veg to help towards the 5 a day)
  • Tin of chopped tomatoes
  • Tin of sweetcorn
  • Tin of chopped pineapple pieces
  • 200ml Passata
  • 1/4 tube of tomato paste
  • Dash of Worcestershire Sauce
  • Salt and Pepper to taste
  • 1 chicken stock cube dissolved in a little water
  • chilli sauce as required (this can also be omitted)

A rough version of Louisiana Creole dish Jambalaya which doesn't cost much

  • 2 sausages (or the same amount of chorizo sausage from lidl)
  • 1 chicken breast
  • 1 onion (white or red)
  • 1 can chopped tomatoes
  • 1 clove garlic
  • 1 or more of the following
  • red pepper/ green pepper / handful of mushrooms
  • 0.5 cup rice (literally, measure it in a tea cup)
  • 1.5 cups chicken stock (hot water and chicken stock cube)
  • 1 tsp worcester sauce
  • 1 tsp chilli powder
  • 1/2 tsp of black pepper

Here’s a great midweek meal

  • 1 Onion, finely diced
  • 2 Carrots, finely diced
  • 2 Cloves of Garlic, crushed
  • 150g Chorizo, sliced
  • 1 Chilli, finely diced (or as much as you can handle!)
  • 1 tsp Smoked Paprika
  • 400g Tin of Chopped Tomatoes
  • 600ml Chicken Stock
  • 250g Long Grain Rice
  • 100g Prawns
  • 1 Lemon, just the juice
  • Coriander, to garnish
