A one-pan rice dish which I use to feed my family of 6 (myself, husband, and 4 children aged 18,16,14 & 7)
- 200 g bite sizes pieces of left over meat (chicken, chorizo, beef, ham, sausage etc). Alternatively, meat can be cooked specifically for the recipe, but will add to the preparation time.
- 500 g of easy-cook long grain rice
- raw vegetables as available - eg onion, pepper, courgette, carrot, celery (I usually use at least two different veg to help towards the 5 a day)
- Tin of chopped tomatoes
- Tin of sweetcorn
- Tin of chopped pineapple pieces
- 200ml Passata
- 1/4 tube of tomato paste
- Dash of Worcestershire Sauce
