Easy Jambalaya

A delicious Creole chicken, sausage, veg and rice dish- can be all cooked in one-pot, a great way of using leftover
- 50g margarine
- 1 white onion, diced
- 1 celery stick, diced
- 1 red pepper, seeded and sliced into strips
- 2 garlic cloves, crushed finely
- 1 red chilli, finely chopped
- 1 tbsp Cajun seasoning
- ½ tsp Worcestershire sauce
- Pinch smoked paprika
- 180g long grain rice
- 1 tin chopped tomatoes
- 500ml chicken stock
- 4 cooked sausages, sliced thickly
- 120g cooked chicken
- Salt, pepper and sugar to taste.

A rough version of Louisiana Creole dish Jambalaya which doesn't cost much
- 2 sausages (or the same amount of chorizo sausage from lidl)
- 1 chicken breast
- 1 onion (white or red)
- 1 can chopped tomatoes
- 1 clove garlic
- 1 or more of the following
- red pepper/ green pepper / handful of mushrooms
- 0.5 cup rice (literally, measure it in a tea cup)
- 1.5 cups chicken stock (hot water and chicken stock cube)
- 1 tsp worcester sauce
- 1 tsp chilli powder
- 1/2 tsp of black pepper

- 100g baked ham
- 225g long grain rice
- 1 tin chopped tomatoes
- 1 green pepper
- 1 large onion
- 2 garlic cloves
- 3 celery stalks
- 1 large carrot
- 1 tsp tabasco sauce
- 1 tsp fresh thyme
- olive oil
