Ingredients
- 2 chicken breasts
- 100g chorizo
- 100g baked ham
- 225g long grain rice
- 1 tin chopped tomatoes
- 1 green pepper
- 1 large onion
- 2 garlic cloves
- 3 celery stalks
- 1 large carrot
- 1 tsp tabasco sauce
- 1 tsp fresh thyme
- olive oil

Preparation
Step 1
Fry the chopped onion and garlic
Add the diced chicken breast
Once chicken has browned, add the other chopped vegetables
Add diced chorizo and ham
Fry for another 2 minutes
Add the tin of tomatoes, tabasco and thyme and simmer for twenty minutes
Rinse rice and boil in salted water for ten minutes.
Drain and rince and then add to the tomato mixture
Add a cup of water - more if required
Simmer for 20 minutes on a low heat and keep stirring
The rice should absorb the water, but don't let it dry out - it should have a moist but not runny consistency
