Easy Microwave Lemon Curd

  • 100g butter
  • 3 large eggs and 1 extra yolk
  • 200g caster sugar
  • Juice and Zest of 3 lemons

Step 1

Juice and Zest the lemons.

Step 2

Melt butter in the microwave on defrost.

Step 3

Beat together the Eggs, Caster Sugar, Jemon Juice and Zest and add to the melted butter

Step 4

Heat in the microwave for one minute, stir, then cook for another minute. Repeat for a total of four minutes. Once the mixture is coating the back of the spoon push through a sieve to remove the zest and its ready!
