Chicken Fried Rice

Ingredients
- 400g long grain white rice
- 4 rashers thinly sliced bacon
- 2 thinly cut spring onions
- 2 eggs
- 4 chicken breasts
- 2 tbs oil
- pepper
- soy sauce

Preparation
Step 1
Place the rice in boiling water.
Simmer for 15 mins.
Step 2
Drain rice, cool with cold water, then drain again.
Place in fridge for 4/5 hrs.
Step 3
After 4/5 hrs - Cook chicken breasts in oven at 180C for 30 mins.
Step 4
While chicken is cooking, heat wok until very warm.
Add 2 tbs of oil and wait until hot.
Step 5
Put rice in and flatten down with spatula so all rice gets cooked.
Step 6
Beat 2 eggs together in bowl and add a pinch of pepper.
Step 7
Add mixture to middle of rice, keep stiring until rice absorbs eggs.
Step 8
Put strips of bacon in rice, keep stiring.
Add thinly cut spring onions and splash of soy sauce.
Step 9
Once chicken has cooked slice into strips and add to wok.
Stir in and cook for a few minutes.
Step 10
Add soy sauce to taste.
