Tomato and Mascarpone Chicken

Chicken breasts baked in a creamy tomato sauce. Best served with hot pasta. remaining sauce can be used as a stir in sauce for lunches or quick meals
Ingredients
- 4 Chicken Breast fillets
- 1 tin of chopped tomatoes
- 1/2 tub of mascarpone cheese
- 3 handfuls of spinach
- Mixed herbs (fresh or dried)
- 1-2 garlic cloves
- 1 table spoon of olive oil
- Mozzarella or Parmesan (to preference)

Preparation
Step 1
Pre-heat your oven to 160 degrees. Empty the chopped tomatoes into a saucepan, add the mascarpone and bring to the boil.
Step 2
Allow the tomato and mascarpone sauce to cool. Crush the garlic cloves and heat the oil in a frying pan.
Step 3
Seal the chicken in the frying pan along with the garlic.
Step 4
When the sauce is cooled add the spinach, garlic and mixed herbs to the sauce in a blender or food processor.
Step 5
When blended smoothly; pour over the chicken in a oven proof dish and bake for 25-35 minutes.
Step 6
If you wish, in the last 10 minutes or so you can top the dish with some mozzarella slices.
