Ingredients

  • 150 g pudding rice
  • 400 ml light coconut milk
  • 200 ml semi-skimmed milk
  • 2 tsp vanilla extract
  • 2 tbsp caster sugar/light soft brown sugar
  • mango and honey, to serve

Preparation

Step 1

Put rice and milks into pan, bring to boil, reduce heat, simmer 20 mins, stirring occasionally.

Step 2

Add vanilla and sugar, mix well. Serve with fresh fruit and honey.
