Ingredients
- 150 g pudding rice
- 400 ml light coconut milk
- 200 ml semi-skimmed milk
- 2 tsp vanilla extract
- 2 tbsp caster sugar/light soft brown sugar
- mango and honey, to serve

Step 1
Put rice and milks into pan, bring to boil, reduce heat, simmer 20 mins, stirring occasionally.
Step 2
Add vanilla and sugar, mix well. Serve with fresh fruit and honey.
