  • 300g self raising flour
  • 200g caster sugar
  • 200g margerine
  • 100g desicrated coconute plus some for decoration
  • zest & juice of half an orange
  • 3 xl eggs
  • for icing
  • butter
  • icing sugar
  • desicrated coconut
  • jam optional

Step 1

add flor sugar marge and eggs into a large mxing bowl mix together on mediaum speed for around 2 minutes

Step 2

add in orange juice rind and coconut mix for a further minute on low

Step 3

grease a 25 by 15cm tray and add mixuter bake on 180 degrees 160 fan for around 20 to 25minutes untill golden brown

Step 4

remove and allow to cool

Step 5

once cool mix together 100g of butter and 150g of icing sugar untill creamy and smooth

Step 6

adda nice layer of jam on top of cake and top with butter icing dust with desicrated coconut pat down slightly to ensure coconute stays in the butter icing

Step 7

make a cuppa and enjoy
