Middle Eastern Grilled Sandwiches

Heat oil in a frying pan over medium heat
- 2 tbs oil
- 1 onion finely chopped
- 400g lamb or beef mince
- 1 clove garlic, crushed with 1/2 tsp of salt
- 1 fresh red chilli finely diced.
- 1 tsp ground cumin
- 1 tsp ground allspice
- 3 tbs chopped fresh coriander
- 3 tbs chopped fresh parsley
- 6 small rounds pita bread
- 150g grated haloumi cheese (optional)

Put the Minced Lamb into a mixing bowl
- 1 kilo of Ground Lamb Mince
- 1/2 Tsp Cumin
- 1 Clove of Garlic (finally chopped or pressed)

- 1-2 cloves crushed garlic
- ½ a small onion
- 3 tsp dried mint
- 2 tsp cumin powder
- 1 tsp dried oregano
- ½ tsp ground coriander
- 1 tsp mint sauce
- 1 tsp cracked black pepper

Put the pork into an oven tray
- 1 large joint of pork, such as a hand of pork.
- For the marinade
- 2 tbsp honey.
- 2 tbsp Worcestershire sauce.
- 2 tsp smoked paprika.
- 2 tbsp olive oil.
- 1 whole bulb of garlic, crushed by hand.
- Plenty of fresh thyme.
- Plenty of fresh rosemary.
- 2 big pinches of salt.
- 1 big pinch of pepper.
- 330ml bottle American pale ale.
- Homemade pittas, to serve

- 20g/⅔oz nigella seeds or black onion seeds

- 2 tsp olive oil, plus extra for kneading
