1. Break the chocolate into a large heatproof bowl and set it over a pan of gently simmering water
- • 150g (5½ oz) plain dark chocolate
- • 2 large egg yolks
- • 45g (1½ oz) caster sugar
- • 150g (5½ oz) full-fat crème fraîche
- • 150ml (5fl oz) double or whipping cream
- • 1 tsp instant coffee granules

To make the brownies: Preheat oven to 350 degrees (180 C)
- Makes 1 8×8-inch pan
- FOR THE BROWNIES
- 1/2 cup (50 grams) unsweetened cocoa powder
- 1/2 cup (64 grams) all-purpose flour

A lovely chocolate treat for valentines day, indulgent yet affordable
- 500g chocolate i use dairy milk mixed with Asda smartprice chocolate. Can be done with a mix of terrys chocolate orange instead for an orange twist but not with galaxy or cooking chocolate i found these didn't taste very good.

- 3 tablespoons cake flour (not self-rising), sifted after measuring, plus additional for dusting pan
- 2 whole large eggs at room temperature
- ½ cup almond flour
- ½ cup unsweetened cocoa powder
- 1/2 cup confectioners sugar
- 2 large egg whites at room temperature
- 1/8 teaspoon cream of tartar
- 1/8 teaspoon salt
